This vintage will long be remebered as producing wines of exceptional finesse and quality. The inaugural release of FIGGINS perfectly exemplifies the brilliance of this vintage from the Walla Walla Valley. The wine has loads of bright raspberry, blueberry, red apple cider, Grand Marnier, tobacco and sage with further notes of cassis, red fruits, blackberries, currants, fruit tree flowers and a slight hint of cedar shavings. On the palate the wine has a remarkable freshness and excellent length highlighted by super fine-grained, silky tannins. Having a core of preciese "just ripe fruit" the wine has power but emphasizes restraint, elegance and balance.
- 4 Lostine Cattle Company Steaks
- 2 cloves of garlic, minced
- 1 Tbs cracked black pepper
- 1 Tbs fresh thyme leaves, rough chopped
- 1 Tbs fresh rosemary leaves, rough chopped
- 1/4 tsp kosher salt
- 1/4 C olive oil
Mix all ingredients in a bowl and marinate steaks at room temperature for 1 hour. Heat grill to medium-high. Sear steaks for 2 minutes each side and then continue to cook for 4–6 minutes until rare to medium rare. Remove steaks from grill and allow to rest covered for 10–15 minutes.Garnish with rosemary sprigs and serve with fresh tomatoes.
