Chipotle Beef Sliders
- 12oz Lostine Ground Beef
- 1 chipotle chile, seeded & chopped
- 1/4 C nonfat Greek yogurt
- 1 tsp lemon juice
- 3 medium jalapeno chiles, seeded & cut in half lengthwise
- 1/2 tsp olive oil
- 12 small slider buns, about 0.75 oz each
- 1 large tomato, sliced
- 1/2 small avocado, peeled & sliced
- 12 cilantro leaves

Preheat grill for medium-high heat. In a medium bowl, mix together beef and 1/4 teaspoon salt. Form into 12 small, flat patties about 1 ounce each. In a small bowl, mix together chipotle chili, yogurt and lemon juice. Season to taste with salt and pepper.
Toss peppers with olive oil and season to taste with salt. Grill peppers until cooked through and edges begin to brown, about 3 minutes per side. Toast buns cut side down. Sear burgers until brown, about 30 seconds per side. Move burgers to cooler part of grill until cooked to desired doneness, about 2 minutes for well done. Let patties rest on a plate, turning occasionally, 2 minutes. Spread yogurt sauce on both sides of buns. Build slider with tomato, pepper, burger patty, avocado, and cilantro.
