Caramelized Onion & Goat Cheese Sliders

Serves: 6-8
  • 3 lbs Lostine ground beef
  • 5 egg yolks
  • 12 sprigs fresh thyme leaves, roughly chopped
  • 1 pinch red chili flakes
  • 1/8 tsp medium ground black pepper
  • 1 1/2 tsp kosher salt
  • 5 oz chevre soft goat cheese
  • 3 lbs Walla Walla sweet onions
  • 2 tsp sugar
  • 4 Tbs olive oil


Gently mix first six ingredients by hand and form into 2oz patties. Cook on a flat to grill using olive oil as needed to keep burgers from sticking. Cook 2 mintues per side or to desired doneness. Place on bun with a dollop of mayonnaise and top with crumbed chevre and caramalized onions.

Caramelized Onions

Slice 3lbs of Walla Walla sweet onions. Cook in 4 tablespoons of olive oil in a large skillet over medium-high heat. Add 1/4 teaspoon each of salt and pepper and cook, stirring constantly, until the onions begin to soften, about 5 minutes. Stir in 2 teaspoons of sugar and cook, scraping the browned bits off the bottom of the pan frequently, until the onions are golden brown, about 20 minutes.
